Daniel Humm
Daniel Humm was born in 1976 in Strengelbach, a small village in the canton of Argovia, Switzerland. From a young age, he enjoyed accompanying his mother to the market to select fresh, local ingredients. Another passion of his was mountain biking, which he started at the age of ten, eventually becoming a part of the Swiss Junior National Team. At fourteen, he left school to work in the kitchen, despite his architect father's opposition, who had envisioned a different future for him. "And it was the best decision I ever made. My father was against it, but I persisted. I learned much more outside of school than inside." Nevertheless, he remained an admirer of beauty and an art collector.
His debut was at "Baur au Lac" on Lake Zurich. Within a year, his choice of career became permanent: at just fifteen years old, amidst conflict with his father, Humm informed his parents that he would not return home and packed his bags to work as a commis at "Claridge's" in London. At eighteen, he became a father to his first daughter, Justine, but the mother left, severing all ties.

Daniel Humm (born September 21, 1976)[2] is a Swiss plant-based chef and owner of Daniel Humm Hospitality, the New York-based hospitality group behind the highly acclaimed Eleven Madison Park,[3][4][5] Clemente Bar, and direct-to-consumer lifestyle brand Eleven Madison Home. In September 2024, he was appointed a UNESCO Goodwill Ambassador for food education due to his advocacy for sustainable food systems.
In 2003, Humm moved to the United States to become the executive chef at Campton Place in San Francisco[6] where he received four stars from the San Francisco Chronicle. Three years later, he moved to New York to become the executive chef at Eleven Madison Park, and in 2011 he and his business partner Will Guidara purchased the restaurant from Danny Meyer's Union Square Hospitality Group. In 2017, Eleven Madison Park became number 1 on the World's 50 Best Restaurants. In October 2024, Humm opened Clemente Bar, a cocktail bar and tasting counter on the second floor

Daniel Humm has gone from endurance athlete to endurance chef. Over the years, he’s navigated extreme highs and lows, from being named the The World's Best Restaurant to facing bankruptcy during the pandemic, transformed Eleven Madison Park (EMP) into a community kitchen, co-founded Rethink Food, re-launched EMP as entirely plant-based in 2021, and celebrated in 2022 as it was the first plant-based restaurant to be awarded three Michelin stars. He’s now looking to the future, with Bar Clemente launching this fall, and a new West Village restaurant opening in 2025. As part of #50BestTalks at The World’s 50 Best Restaurant 2024 event programme in Las Vegas, Humm discussed evolution, process, inspiration and facing criticism.
